One Pan Chicken and Veggie Bowl

This is a great recipe for those nights when you are tired or short on time but still want a healthy, nutritious and delicious meal.

Serves 4

Ingredients

2 large chicken breasts
1 spanish onion chipped
½ cup chopped red capsicum
½ cup chopped green capsicum
½ cup chopped yellow capsicum
1 cup chopped broccoli
1 cup cherry tomatoes halved
3 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
2 teaspoons Italian seasoning
¼ teaspoon paprika
½ fresh lemon (optional)

Method

  1. Preheat oven to 250 degrees
  2. Cut chicken into cubes
  3. Place the chicken and veggies in a medium roasting pan
  4. Add the olive oil, salt, pepper, Italian seasoning and paprika and toss to combine
  5. Bake for 20 minutes or until veggies are charred and chicken is cooked through
  6. Serve with some quinoa, brown rice, over some zucchini or sweet potato noodles or enjoy as is with a bit of fresh lemon juice squeezed over the top.
