Lemon Bliss Balls

We love bliss balls as an afternoon snack and these ones are a great treat in summer.

Ingredients

  • Zest of 1 lemon
  • Juice of 2 lemons
  • 3 tablespoons pure maple syrup
  • 75g almond meal (1 cup)
  • 75g coconut oil (melted)
  • 100g desiccated coconut
  • 6 medjool dates (pitted)
  • Extra coconut for rolling

Method

  1. Place zest and coconut oil in a food processor and mix until very fine, scrape down the sides and repeat until zest is completely blended into the coconut
  2. Add the rest of the ingredients and blend, scraping down sides and repeating until it’s all  mixed together
  3. The mixture is quite soft at this stage but will firm up as the coconut oil sets
  4. If time permits let the mixture firm up at this point
  5. When the mixture is firmer roll into small balls and cover in the extra coconut
  6. Store in an airtight container in the fridge
  7. Enjoy!
