CaRAWmel Slice

Just try stopping at one slice of this decadent, guilt-free, raw caramel slice. This is a favourite go-to treat in my house.

 

Ingredients:

Base

  • ½ cup raw almonds
  • 1 cup raw walnuts
  • ⅛ cup unsweetened shredded coconut
  • ½ tsp pure vanilla extract
  • ¼ cup cacao powder
  • 6 tbsp raw honey

Filling

  • ¾ cup cashews
  • ½ tsp pure vanilla extract
  • ¼ cup water
  • 2 tbsp raw honey
  • ⅛ cup coconut oil (melted)

Topping

  • ¼ cup coconut oil (hard/refrigerated)
  • ⅓ cup raw honey
  • ¼ cup coconut oil (melted)
  • ¼ cup cacao powder

Method

Base

  1. Put baking paper in an 8×8 inch dish.
  2. Grind almonds and walnuts in a food processor, leave small chunks for texture. Place in a bowl.
  3. Add in coconut.
  4. Process remaining ingredients until smooth, add to the bowl.
  5. Mix all ingredients by hand, and press firmly into the pre-prepared dish.
  6. Set aside. 

Filling

  1. Grind cashews as finely as possible in a food processor.
  2. Add remaining ingredients, and process until smooth and creamy.
  3. Spread over base, and place in freezer.
  4. Check to see when its firm. Now you’re ready for the topping.

Topping

  1. Mix the hard coconut oil and honey in a food processor until smooth.
  2. Add remaining ingredients and mix until smooth.
  3. Remove slice from freezer, and spread on topping.
  4. Place in freezer/fridge, and leave to set. As this is a raw dessert, you will need to store it in the fridge/freezer, so it doesn’t melt.
