Green Bean and Feta Salad
This green bean and feta salad is a hit at parties! Fresh, vibrant and packed full of flavour, you will find yourself making this time and time again as it is sooooo delicious!
Ingredients:
- 500g green beans
- ¼ cup water
- ½ tsp rock salt
- 2 tbsp extra virgin olive oil
- Juice from ½ lemon
- 2 tsp dijon mustard
- 2 cloves garlic minced in a garlic press
- ¼ cup Danish feta cheese
- Cracked pepper to taste
Method:
- In a little bit of extra virgin olive oil, cook the almonds in a frying pan on a medium-low heat and stir frequently so the almonds do not burn. You want them to be toasted and golden on the edges. Transfer the almonds to a bowl and cool in the fridge.
- Add green beans, water and rock salt in a frying pan on the stove and cover with a lid. Cook the beans on a medium heat until they are nearly tender (approximately 7-10 minutes). Remove the lid, raise the heat to medium-high and cook until the liquid evaporates. Remove the frying pan from the heat.
- In a bowl whisk together the olive oil, lemon juice, mustard, minced garlic, cracked pepper.
- Add the olive oil mixture and cooled almonds to the fry pan with the green beans and crumble the feta into the pan and mix altogether.
- Transfer the green bean salad into a serving bowl or platter and enjoy!
