CaRAWmel Slice
Just try stopping at one slice of this decadent, guilt-free, raw caramel slice. This is a favourite go-to treat in my house.
Ingredients:
Base
- ½ cup raw almonds
- 1 cup raw walnuts
- ⅛ cup unsweetened shredded coconut
- ½ tsp pure vanilla extract
- ¼ cup cacao powder
- 6 tbsp raw honey
Filling
- ¾ cup cashews
- ½ tsp pure vanilla extract
- ¼ cup water
- 2 tbsp raw honey
- ⅛ cup coconut oil (melted)
Topping
- ¼ cup coconut oil (hard/refrigerated)
- ⅓ cup raw honey
- ¼ cup coconut oil (melted)
- ¼ cup cacao powder
Method
Base
- Put baking paper in an 8×8 inch dish.
- Grind almonds and walnuts in a food processor, leave small chunks for texture. Place in a bowl.
- Add in coconut.
- Process remaining ingredients until smooth, add to the bowl.
- Mix all ingredients by hand, and press firmly into the pre-prepared dish.
- Set aside.
Filling
- Grind cashews as finely as possible in a food processor.
- Add remaining ingredients, and process until smooth and creamy.
- Spread over base, and place in freezer.
- Check to see when its firm. Now you’re ready for the topping.
Topping
- Mix the hard coconut oil and honey in a food processor until smooth.
- Add remaining ingredients and mix until smooth.
- Remove slice from freezer, and spread on topping.
- Place in freezer/fridge, and leave to set. As this is a raw dessert, you will need to store it in the fridge/freezer, so it doesn’t melt.
