Easy Bacon Wrapped Chicken

Is there anything better than bacon? It’s crispy, mouthwatering, smoky deliciousness.  But I left it off my plate for years because it was full of harmful chemicals and pork farming practices left a lot to be desired.  That’s why I am now so excited that free range and organic nitrate-free bacon is now widely available. Woohoo!

This recipe takes the most boring cut of meat of all time – chicken breasts – and makes them delicious.  The mix of spices and juice-trapping-bacon make this the best breast you’ll ever have on your plate!

Ingredients:

  • 4 chicken breasts
  • 8 -10 rashers of nitrate-free free range or organic bacon (thin cut or American-style)
  • 2 tablespoons of organic brown sugar or coconut sugar
  • 1 tablespoon of paprika
  • ¼ teaspoon dried rosemary or thyme
  • ¼ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

(A shortcut is to use a tablespoon of your favourite chicken seasoning instead of the last five ingredients)

Method: 

  1. Preheat the oven to 190 degrees C.
  2. Mix the brown sugar and spices together in a small bowl.
  3. Rub two thirds of the spice mixture all over the chicken breasts.
  4. Take two rashers of bacon and wrap them around the chicken breasts (so all the breast is covered – if you need more bacon, then add another rasher).
  5. Put the chicken breasts, seam side down, in a baking dish or ovenproof frypan.
  6. Sprinkle the rest of your spice mix over the top of the chicken.
  7. Bake for around 30 minutes or until bacon and chicken are cooked through, basting the breasts with the pan drippings every now and them.
  8. Then, to ensure your bacon is crispy, grill for 1-2 minutes.
  9. Serve with a few spoons of the basting juices over the top.  Add some roasted veg, a salad, or Perfectly Simple Asparagus on the side.
