Kid-friendly Yellow Curry
Over 20 years ago, on a trip to northern Thailand, I experienced a yellow curry for the first time. It was so thick, rich and delicious and much milder than ones I had eaten in the south. It originates in a blend of Thai, Indian and British cuisine and creates a meal that’s perfect for kids or adults who are shy of chilli. This is my favourite comfort food.
Ingredients:
- ⅔ of a 114 gram can of Maesri brand Yellow Curry paste (this really is the BEST brand of Thai curry paste)
- 2 tablespoons of palm sugar
- 1.5 tablespoons soy sauce or tamari
- 1 tablespoon of Ketchup Manis (sweet soy sauce – if you are gluten-free, switch out the Ketchup Manis for one extra tablespoon of tamari and add in an extra half a tablespoon of palm sugar)
- 500 grams of diced chicken thighs, lamb, or beef
- 3 large red potatoes chopped into bite-sized chunks.
- 540 mls of coconut cream (use a pure cream like the one from Ayam or Aroy-D)
- Handful of chopped coriander
Method:
- Shake the container of coconut cream to blend the solids with the liquid, then splash a teaspoon of the cream into a large wok or frypan.
- Heat the frypan to medium-high.
- Add in the curry paste and stir for 30 seconds.
- Add in your meat and stir till it is browned.
- Turn down the heat to low and add in the rest of the coconut cream.
- Add in the sugar, and sauces (soy/or tamari and ketchup manis).
- Cook the meat (stirring occasionally) for 20-40 minutes depending on how tough the meat is.
- Throw in your potatoes and simmer till cooked (usually around 30 minutes).
- Sprinkle on coriander.
- Serve with jasmine or basmati rice or eat with roti bread.
- I love it with this Quick Thai Pickle on the side.
- Enjoy!
Note 1: You can exchange the meat for any of your favourite protein or vegetables, but this curry usually works best with something fairly rich in flavour. I LOVE it with lamb shanks or duck for example. You will need to adjust cooking times accordingly.
Note 2: The amount of sugar and curry paste may take a little time and experimentation to perfect for your family. I always have a cup of warm coconut cream on the table in case someone likes to have zero spiciness in their meal.
